Absolutely DELICIOUS Christmas Dinner....

I sit here days after Christmas still so very amazed and thankful regarding how amazing Christmas dinner was! It was truly EVERYTHING I desired in having our first Christmas dinner in our first house.

Our menu was as follows: vegan bbq'd wings; vegan bbq'd buffalo wings; vegan turkey; vegan ham; vegan kale greens; vegan black eyed peas; vegan yams; vegan stuffing; vegetarian macaroni & cheese with vegan ham and tomatoes (vegetarian cheese had "less than 2% whey" thus not vegan); vegetarian potato salad; vegan jello; vegan apple pie; vegan gravy; vegan white grape juice; and vegan nog.

EVERYTHING was so amazingly delicious! All whom ate, vegetarians and meat eaters alike, enjoyed it to the fullest. That made everything that went into preparing it that much more special.

I am so thankful to GOD for this Christmas. I look forward to seeing what my husband and I create next year!

When you want to nibble, but really don't need more food, vegan jello with fruit is always a nice, yet not filling, option. Enjoy!
Telling myself to back away from the food. Smh. Veg mac & cheese and vegan bbq'd buffalo wings keep calling me. Lol.

Warm Vegan Eats For A Cold Snowy Day

I've never been a big fan of the cold. However, I decided to make the best of a snowy day by preparing warm and tasty vegan eats earlier. It was definitely worth the wait time in preparation. :) Okay, it didn't take long at all. I was just pressed for time as I had two little ones screaming at me as I cooked. :)

For our lunch today I prepared vegan barbecue sandwiches (using Gardein BBQ wings) topped with fresh baby spinach leaves; warm vegan bologna sandwiches (using Light Life vegan bologna slices); baked potato fries; and warm Roma roasted grain beverages with Silk Soy french vanilla creamer.

Lunch was absolutely DELICIOUS! Everyone enjoyed. I ABSOLUTELY look forward to dinner :)
